Our experience in
Butchershop deli-meats began in 1936. At a duplex on Cleveland's West
Side, we mixed sausage in the kitchen and used the garage as a smokehouse.
Cleveland was a
tough meat town then, rivaling Chicago and Kansas City. National companies
got their start and moved on. We stayed because we liked serving the
neighborhood groceries. Pleasing those fussy, European hausfras taught
us about quality.
We still use natural
animal casings to give our wieners, ethnic sausages an "Wurstmacher
Special Recipes" their distinctive Old World shape and flavor.
We combine lean cuts of meat with special spices, roast and smoke them
slowly, and deliver them quickly to preserve fresh flavors that have
earned us a Butchershop reputation.
